2. Optimization Steps
01 / Fond Generation: Pat your beef cubes completely dry. Sear them in a hot pot with vegetable oil until dark brown crusts form on the edges. Remove the beef pieces, leaving the deep brown caramelized sugar fractions (fond) on the bottom of the pot to season the upcoming vegetable base.
